Fundamental study concerning meat alternatives (FEP-Study)

It is the object of the study to investigate topics concerning the application of meat alternatives based on Soja into the canteen kitchen menu of hospitals.

Topics of interest are the health compatibility of meat alternative products and their ingredients, their allergenic potential as well as their potential to interact with drugs. Also ecological benefits and risks of soja and soja based products will be identified and assessed. Furthermore a survey of such products on the market will be given together with an argumentation portfolio about pro and cons. This will be done to substantiate pilot applications.
